Food & nutrition are important for human beings. The knowledge of food & nutrition plays a major role in the prevention and, management of many diseases. During my long career in the teaching profession. I observed that there is no one particular book that gives complete information about nutrition in the form of a textbook. The need was felt for a simple book for students and that has prompted me to write this book,” VYANJAN” A book of Nutrition this book deals with both theory and practical aspects of nutrition India like other developing countries Rays lot of emphasis on Nutrition these days. This book is divided into three parts.
The first part of the book, Consisting of chapters on the importance of calories, proteins fats, carbohydrates Vitamins and minerals, all the nutrients their importance in our diet and food groups like cereals and millets, pulses dals, or legumes, nuts, and oilseeds vegetables and green leafy vegetables, fruits, milk, and milk products, eggs, meat fish and poultry. Fat and oil, Sugar and jaggery, Spices, Condiments. Basic Five and Seven Food groups plan, their Sources, Composition, and importance in our human body. The concept of a balanced diet and RDA (Recommended Dietary Allowance) nutrition charts for Indians are Focussed well. Different food preservation techniques, beverages (Cups that cheers) we and their role in our diet is discounted in this book.
Food faddism and faults. Food habits, Food adulteration, and Food additives are vividly discussed in this book.
The second part of the book is wholly devoted to the physiology. The digestive system urinary system, Blood circulatory system, etc. are disused in-depth and substantiated with relevant photographs.
The third part of the book is a guide to be the practicals of cooking Recipes of different types are gives with nutritional tips. many of the recipes are Indian, some are taken from other countries. Most of the dishes are liberally accompanied by photographs taken by me after preparing them.
My earlier books “Feeding practices and Nutritional Anthropometry of Pre-School Children” and “Surakhatmak poshan” (in Hindi) won appreciations and encouraged me to write this book, Vyanjan: A textbook of Nutrition.
The book aims at the Undergraduate and Post Graduate students of Home Science of Indian Universities, However, students of Nursing, Hotel management, Medicines, and paramedical courses, etc. will find this book extremely useful for them. This book can be useful for distant education also Reference and Journals are given to stimulate those seeking detailed information. Cooking recipes of Indians, as well as foreign Countries, are given with nutritional tips,
